The importance of water in coffee making is in making the right conditions for extraction.

Solutes, such as the flavorful elements in a coffee bean that make coffee coffee, move from high concentration to low concentration. Water with minerals or other dissolved solids means increased concentration which means less extraction. These dissolved solids also impact the flavor of the drink. For a purer cup, use pure water.
